This is one of my favorite stews, the yellow beans stew. I’ve tried once to prepare it with green beans and I wasn’t thrilled how it turned out. In my opinion, yellow beans are better than green beans. Yellow beans grow in Macedonia and I’m proud to say that Macedonia produces high quality beans with great taste. Preparing is easy, you can use fresh beans or eventually frozen.
- 1 kg yellow beans
- 2-3 carrots
- 1 chopped pepper
- tomato sauce or ketchup
- salt, mixed spices, oil, red pepper
- Wash beans and cut off the ends, divide each piece into 2-3 parts.
- Fry onion in a little oil, add chopped pepper and fry till soft, add 1 teaspoon pepper and water, then the yellow beans and chopped carrots. Optionally, add some peas and potato.
- Boil till soften and add tomato sauce or ketchup in the end. Add parsley, salt and mixed spices and boil for another several minutes.
