MY EASTER SALAD WITH POTATOES, EGGS AND CHEESE

This is a salad that I invented myself. Since I always have too many eggs for Easter, I had to be creative and find a way to spend all those eggs somehow. This is perfect salad, it can also serve as a light lunch. I prepare it many times for my friends in the evening, they’re all thrilled with this salad. It goes well with wine too.

Ingredients:
  • 5-6 larger potatoes
  • 4-5 boiled eggs
  • white cheese
  • 1/4 onion
  • 1-2 tbs mayonnaise
  • olive oil, apple vinegar, salt, black pepper

Preparation:

  1. Boil eggs and potatoes (I boil them together). Cool.
  2. Take a bigger bowl. Grate potatoes first. Add salt, some oil and vinegar.
  3. Then grate above onion.
  4. Grate eggs. Add thin layer of mayonnaise above.
  5. Finish with grated white cheese. Sprinkle black pepper.
